Spinach pesto

Ingredients
  • 100 g fresh spinach
  • 2 cloves of garlic
  • 70 g cashew nuts (half of cup)
  • 1 lime (for juice)
  • 4 tablespoons oil of olive (40 g)
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of chilli pepper
Instructions
  1. Cashew nuts chop and roast on hot frying pan until nuts start to turn pale gold.
  2. Blend together: fresh spinach, roasted nuts, garlic, oil and lime juice. Blend the mass according to your own taste - I like small pieces of nuts.
  3. Season with salt and chilli powder. Stir well.
  4. Pesto is suitable for serving immediately after preparation, but it will get better texture and aroma if you wait 2 hours for flavours to blend.
