Spinach pesto

  • Cashew nuts chop and roast on hot frying pan until nuts start to turn pale gold.
  • Blend together: fresh spinach, roasted nuts, garlic, oil and lime juice. Blend the mass according to your own taste - I like small pieces of nuts.
  • Season with salt and chilli powder. Stir well.
  • Pesto is suitable for serving immediately after preparation, but it will get better texture and aroma if you wait 2 hours for flavours to blend.


It's perfect with corn pasta!
