Pasta with strawberries

Ingredients
  • 250 g vegan gluten free pasta
  • 150 g spinach leaves
  • 4 cloves of garlic
  • 40 g pekane nuts
  • 2 tablespoons olive oil
  • 300 g strawberries
Instructions
  1. Cook pasta, drain and rinse with cold water.
  2. Toss chopped garlic on hot frying pan with olive oil.
  3. Add spinach leaves and keep frying until they soften.
  4. Wash strawberries with cold water, remove stems and cut into quarters.
  5. Remove the pan from heat, add strawberries, nuts and gently stir.
Recipe Notes

  • Nuts will taste better if you roast them before adding them to the salad
  • The salad tastes great with strawberry chilli sauce
  • You can use corn, rice or bean pasta, but corn pasta is best for that recipe
