Nut cookies

Ingredients
  • 2 bananas (240 g)
  • 3 large tablespoons of peanut butter (80 g)
  • 7 tablespoons rice flour (100 g)
  • 4 tablespoons oat flour (60 g)
  • 5 tablespoons shredded coconut (45 g)
  • 10 dates (50 g)
  • 350 g mixed nuts
  • 60 g raisins and dried cranberry
  • 3 tablespoons agave syrup (60 g)
  • a few pieces of chocolate (40 g)
Instructions
  1. Blend banana with peanut butter.
  2. Add 7 tablespoons of rice flour and 4 tablespoons of oat flour and blend again.
  3. Chop mixed nuts into small pieces.
  4. Chop the dates finely with a knife.
  5. Dried cranberries and raisins can be used whole, but I prefer to chop them a little.
  6. Mix banana mass with dried fruit and nuts.
  7. Chop finely chocolate and add to the dough.
  8. Add agave syrup and mix everything well with a silicone spatula.
  9. Heat the oven to 170 degrees C. Place the cookies on oiled baking paper.
  10. Bake for about 14 minutes, leave to cool for a few minutes.
Recipe Notes

  • The dough is very sticky, so the silicone spatula will be best to mix it.
  • You can also add nut syrup to the dough, but this is not necessary.
  • Use your favourite nuts. I mix pecans, peanuts and walnuts.
