Gluten free nut muffins

Ingredients
  • 4 bananas (420 g)
  • 3 tablespoons coconut oil (70 g)
  • 50 ml oat milk
  • 50 ml apple or carrot juice
  • 60 g agave syrup
  • 100 g oat flour
  • 60 g tapioca flour
  • 60 g rice flour
  • 60 g millet flour
  • 2 flat teaspoons baking powder
  • 2 tablespoons peanut butter (70 g)
  • 150 g walnuts and pecans
  • Opcjonalnie (wersja czekoladowa):
  • 1 tablespoon cocoa powder (10 g)
  • 50 g chocolate
Instructions
  1. Blend together: bananas, coconut oil, oat milk, juice, peanut butter and agave syrup.
  2. In a separate bowl, mix well: oat flour, rice flour, millet flour, tapioca flour, baking powder and salt.
  3. Chop nuts
  4. Add chopped nuts and blended mass to a bowl with dry ingredients and mix well again.
  5. Scoop the dough into muffin cups. I use silicone ones - it's very easy to remove ready muffins from them.
  6. Sprinkle the top of the muffins with nuts and put in preheated oven.
  7. Bake for 18 minutes at 180 degrees C.
