French toasts with apricots

Ingredients
  • 4 slices of gluten free bread
  • 1/2 cup oat milk (or other plant milk)
  • 5 tablespoons chickpea flour
  • 1 flat teaspoon of salt
  • 6 apricots
  • 2 tablespoons agave syrup
  • 2 tablespoons olive oil (for frying)
  • 1 tablespoon almond flakes (for sprinkling)
Instructions
    Quick marmelade
  1. Wash and slice apricots
  2. Place on hot pan and mix with agave or maple syrup
  3. Cook on low heat around 7-10 minutes, stir occasionally.
  4. Toasts
  5. Whisk together milk, flour and salt in a wide dish.
  6. Dip bread in mixture, turning to coat both sides evenly.
  7. Fry 2-3 minutes on both sides until golden.
  8. Serve hot, with apricot marmelade on top and sprinkled with almond flakes.
Recipe Notes

Almond flakes add a little bit of crunchiness.
