Banana bread

Servings: 1 loaf
Ingredients
  • 4 ripe banana
  • 50 ml date syrup
  • 80 g oat flour
  • 50 g potato flour
  • 3/4 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 50 g coconut oil
  • 1/4 lime or lemon (for juice)
  • 50 g nuts
Instructions
  1. Stir all dry ingredients in large bowl.
  2. Blend bananas, coconut oil and juice from 1/4 of lime.
  3. Add blended bananas to the bowl.
  4. Chop nuts and add to the bowl.
  5. Mix the dough well.
  6. Brush bread baking tray with oil.
  7. Move dough to the tray.
  8. Bake for 50 minutes in pre-heated oven at 170 deg. C
  9. Leave for 5 minutes open oven to cool down slightly.
Recipe Notes

Use any nuts and berries you like. My favourite combination is cashew nuts and cranberries.
